It's Friday and I am feeling good! Nothing like putting a spring back in your step when you know the end of the week is here. If the day of the week won't put a smile on your face, then these Lil' Orange Cakes sure will! These pretty lil' cakes have lots of orange flavor drizzled with a citrus icing and orange zest. They'll brighten anyone's day...even on a Monday or during a blizzard! Brew up a pot of tea and sit down with a lil' cake. Any worries will disappear and smiles will appear. Light and fresh...just bursting with sunshine! Ingredients to make 1 1/2 dozen: 1 box vanilla cake mix 1 pkg instant vanilla pudding 3 large eggs 1/2 cup sour cream 1/2 cup orange juice 1/2 cup water nonstick spray 1 cup powdered sugar 1 tsp orange zest 6 tsp orange juice Directions: Preheat oven to 375 degrees. Spray a mini bundt or muffin pan with nonstick spray. In a large bowl, mix cake mix, vanilla pudding, eggs, sour cream, orange juice and water until all ingredients are combined. Spoon batter into a prepared mini bundt or muffin pan about 1/2 full. Bake for 17-18 minutes. Remove pan from oven and let cakes sit in pan for 5 minutes. Take cakes out of pan and place on a wire rack to cool. Meanwhile, mix powdered sugar, orange juice and orange zest.
