By using the mini-chopper, all you need to do is putting the ingredients into the bowl of the chopper ^^. Making coffee cookie dough: Put the flour, icing sugar, and instant coffee granules into a bowl of a mini-chopper. Process until combined. Add the butter and process to combine. Add the egg and cold water. Process until a dough forms. Remove from the bowl. Press the dough with the palm of your hand until smooth. Cover and refrigerate for 30 minutes. Making chocolate cookie dough: Put the flour, icing sugar, and cocoa powder into a bowl of a mini-chopper. Process until combined. Add the butter and process to combine. Add the egg and cold water. Process until a dough forms. Remove from the bowl. Press the dough with the palm of your hand until smooth. Cover and refrigerate for 30 minutes. Roll the vanilla cookie dough between a sheet of baking paper. Place small balls of chocolate and coffee dough randomly. Roll with the rolling pin until the thickness of the dough is about 3 mm. Refrigerate for 30 minutes Do the same to the chocolate and coffee dough (or just roll the dough to 3 mm. thickness if you want). I use a Cat cookie cutter (3.5x8 cm). Cut the cookie dough with the cookie cutter. Place on a lined baking sheet. Refrigerate for 30 minutes.
