Content Creator: @mitali.eats INGREDIENTS 2 medium potatoes, peeled & chopped 1/2 head of cauliflower, chopped into florets 1/2 a garlic bulb 1/4 red onion, chopped 3 tbsp evoo salt, pepper 1 1/2 cups vegetable broth (or more, depending on how runny you want it to be) TOPPING coconut cream fresh thyme baguette @gustafoods cheese DIRECTIONS add the potatoes, cauliflower, garlic, onion, olive oil, salt, and pepper to a baking dish and cover with aluminum foil. bake at 400F for 25-30 minutes covered and 10 more minutes uncovered. add all the ingredients to a blender along with vegetable broth and blend until smooth. pour into a bowl, top with coconut cream, fresh thyme, grated cheese, and crushed pepper. enjoy!
