The mini muffins are incredibly easy to make and taste delicious. The best part is they can be frozen and thawed in the microwave as you need them. A hit with kids! This recipe makes: • 48 mini muffins OR • 24 regular sized muffins OR • 4 mini loaves of banana bread • 1 regular size loaf of banana bread (9x5-inch) • Pancakes too!
