You can use fresh or frozen berries. I buy extra berries in the summer months and freeze them for later. Make sure to clear any debris or stems off the berries before freezing and don't wash them. You can also spice up the topping: Add 1/4 teaspoon or so of ground cinnamon to the topping when blending the dry ingredients.

I recommend using parchment muffin liners so the muffins are easy to remove. For SCD, honey only.As for type of oil, I usually use sunflower, but olive oil or other light work as well. I'd avoid an oil with a strong flavor that will interfere with the lemon flavor. I don't recommend coconut oil because some readers have told me it doesn't work. You can substitute oil with applesauce though, which is a great option!
What is the Specific Carbohydrate Diet (SCD)? SCD is a diet focused on eating foods that have only simple carbohydrates, or single sugars. This includes many fresh vegetables, fruit, protein, and honey. Eating simple carbohydrates, as opposed to complex carbohydrates, influences your intestinal bacteria. The goal of the diet is to starve out bad bacteria in the gut so that your intestines can heal. Certain carbohydrates are not fully digested and must be broken down by bacteria in the gut, which can cause an overgrowth of bad bacteria and other digestive waste products. The best introduction to the diet is to

Dear Cauliflower Wraps… you smell. How do you tell the love of your life that they have a body odor problem? I have fallen head over heels for cauliflower, but the dear vegetable makes my kitchen smell like a putrefying laundry hamper. In all honesty, these grain-free cauliflower wraps are worth a smelly kitchen. Very, very worth it. If you have a Pinterest account, chances are you have seen the Cauliflower Pizza Crust pinned to nearly everyone's Recipes to Try board. Unfortunately for me, this recipe relies on a hearty dose of mozzarella to bind the crust together. Cheese and

Healthy Gluten-Free Keto Cauliflower Fritters. An easy and tasty 4-ingredient crispy fritter recipe perfect as a clean eating meal on its own or to fill keto burger buns.
In the history of forever- has an original anything ever been topped by a duplicate or spin-off version? Rarely, if ever. Such is the case of an Oreo. I always was a bigger fan of the original chocolate Oreo but since chocolate is not technically allowed on scd, I figured a vanilla Oreo was worth settling for. Paired with fresh coconut milk poured into a wide rimmed glass, these dunkable delights are going to be on my "repeat recipe" list. Unfortunately, the cookies do not get the same crunch as the store bought ones, I have a really hard time getting any nut-flour based dough to be crisp unless it's used as a thin batter for something pan fried, but the flavor and feel of these cookies are just as the original. Cookie: 3/4 cup coconut flour 1/3 cup almond butter 1 Tbsp vanilla 1/4 tsp salt 1/2 tsp baking soda 6 tbsp softened butter (or oil for paleo) 1 Tbsp honey 2 eggs Mix all of the above ingredients together in a bowl. Use a small spoon and place on baking sheet. Push down on the balls of dough and even them out, forming small circles. Do not go too big, or they will fall apart once they are cooked. Bake at 350 for about 12 minutes, flip over and bake for another 2 or 3 minutes, or until just turning golden. Let cool before frosting. Filling: equal parts honey and Greek-style dripped yogurt that has been dripped for 12 hours a few drops of vanilla extract is optional Use a spoon and gently generously frost one side of a cookie, place another cookie on top. Or, if you are feeling fancy, you can spoon the frosting into a plastic Ziploc bag and cut off the tip of one of the bottom corners of the bag, and you can then pipe the frosting onto a cookie in a neat and organized manner. I prefer the quicker way because of just that, it's quicker. Note of amazingness: these are equally as good when frozen and eaten as an ice-cream-like cookie sandwich.

I wanted to do something a little bit different for Valentine’s Day. I enjoy the SCD Cheesecake from Breaking the Vicious Cycle because it’s not overly sweet, is lighter than a cake/treat make with nut flours, and because it’s make with farmer’s cheese and eggs – is a protein rich dessert. I also enjoy the Berry Boost juice from Bolthouse farms every so often. I like it because it’s thick and sweet and satisfies a milkshake or smoothie craving while still being healthy since it’s all fruit purees and juices with some additional vitamins added. (although lately, it’s been starting
I like thinly sliced chicken, but any will work. I also get really generous with the salt and paprika, so you may be inspired to add more than what the recipe calls for. I use double the amount of paprika and salt!I estimated the oil, but use enough oil in the skillet or pan so that the chicken doesn't stick to it. Better to have a bit more oil and then drain it off at the end by dripping it over a paper towel.A reader mentioned that SCD garlic powder is hard to find (most have de-caking agents in them). If you can't find it, either don't use it or use some fresh crushed garlic.
