Зима иде и ако татко ви не маа` пръжки с лук, то най-вероятно топи `лебеца в соса на катиното мезе. Или поне ако е от пиринския край и по-конкретно Банско. Днес ще ви съблазнявам с една от най-обичаните рецепти от българската кухня, за да ви напомня, че макар слънцето навън да пече, това да не ви подвежда, за изолация трябва да помислите и на прозорците и на кокалите. Последно време кой като видя настинал, все е слаб, бе!!! Тука има нещо! Тия диети умориха народа значи, затова по-добре си му седнете да си хапнете едно вкусно, месно ястие, па си му сипете чаша червено вино и се подгответе да живеете до сто. Тя баба ми и попарата с червено вино я е яла, а ние тук ще говорим за здравословно хранене. Няма по-здравословното от домашно приготвено, с много любов и да ти е кеф на душата. С колкото повече хора го споделиш, по-малка е вероятността да да преядеш и това също е добре. Животът е да е живее, а щастието e да се споделя, затова и аз искам да ви посъветвам да го направите точно така. Едно от нещата, които ме усмихна напоследък бе Ани Йорданова, една от моите приятели-читатели, която ме зарадва в много мило писъмце Дойде ми като забравена петoлевка в стари дънки - неочаквано щастие баш на време. Усетила ме е някак, че зад неспирния ми оптимизъм и разговорливост се крие един човек, борещ се с доста големи затрудения в момента и решила да ме подкрепи по най-добрия начин, с няколко рецепти в конкурса на Кикоман, за който ви говорих тук. Наистина няма по-добра новина за мен от тази, защото си мислих, че покрай многото задачи не ми оставаше време да ви запозная с голямото разнообразие от възможности за използване на соса и вече си мислех, че ще видя награда през крив макарон. Нейната подкрепа обаче освен много усмивки ми даде и нови сили и ето, че се завръщам с още една чудна рецепта за традиционно българско ястие, но този път със соев сос. Това кръгът на инспирирането е просто като магия - ти го правиш за някого, той за друг, той пък за трети и накрая пак стига до теб. И така, време е да преминем към рецептата: Необходими продукти: Около 400 г свинско месо 100 г гъби 1-2 глави лук 2 с.л. лимонов сок 1 с.л. доматен пюре 1 с.л. соев сос Кикоман черен и червени пипер сол магданоз олио Започваме като нарязваме свинското на средно големи парченца. Подготвяме и останалите продукти - нарязваме гъбите и лука. Ако обичате повече лук, сложете две по-големи глави ;) В тиган загряваме олио, колкото да облее леко дъното и изсипваме месото. Запържваме месото от всички страни, докато побелее, а след това прибавяме лука и гъбите. Прибавяме подправките - солта, червения и черния пипер, като червения е повечко, соевия сос и лимоновия сок. Добавяме вода, колкото да облее продуктите и оставяме ястието да заври, а след това намаляваме температурата и оставяме да къкри на слаб огън, под капак или фолио, докато месото стане крехко, а сосът се сгъсти. Малко преди да е готово прибавяме и доматеното пюре, като то не е задължително и може да го пропуснете, но сосът става по-плътен и наситен като вкус. Сервираме ястието поднесено с накълцан магданоз, като често се сервира в гювече или понякога с поръска от кашкавал. Соевия сос придава един много приятен солен завършек, а ако искате да си спестите лимоновия сок, може да ползвате направо Понзу сос, който е соев сос с лимон. Аз не можеха да спра да ям, даже докато снимам, защото уханието, което се разнася е просто неописуемо. While I was cooking the goulash inspired soup, I remembered this traditional Bulgarian recipe. As goulash it is more like dish than soup, but if yo make it less thick it can be enjoyed as a wholesome soup as well. Serves 4: for the meatballs: 400-500 gr pork and beef mince 50/50 100 gr rice salt, pepper, cumin, thyme for the soup: 2 tbsp olive oil 2 medium onions chopped 300 gr tomatoes 1 tbsp paprika 1 large potato 1-2 carrots 3-4 cloves of garlic 1.6 l water 1 tsp corn flour 1/2 tsp wheat flour parsley, thyme, oregano Method: Mix the mince, rice and condiments and knead. Make medium sized balls and set aside. In a saucepan heat the oil, add the chopped onion and garlic and fry until golden. Add the paprika stir fr 20 seconds and cover with water. Bring to the boil. Add the meatballs, carrots and potatoes. Simmer for 10 minutes. Add the tomatoes, bring to the boil again and simmer for more 15 minutes. 5 minutes before removing from heat: sprinkle chopped parsley, thyme and oregano. remove with a ladle half a cup of the broth and mix well with the corn and wheat flour until smooth. Return the mixture to the saucepan and let simmer for the remaining 5 minutes.
