Portuguese desserts are to die for and one of my favorites is called a "Guardanapo" which translates to Napkin because of the way it is folded. I fondly remember sitting at the "Pastelarias" in Portugal, their little bakeries and coffee shops, and eating these little cakes. I have wanted to make them for a long time and decided to give it a go this morning, I'm not thrilled with the way they turned out, I will say that the taste is spot on, but the dough for the cake itself was not right, so in the future I'm going to just use my own Jelly Roll recipe for the cake part. Nevertheless, if you want to give them a go, here it is: Jelly Roll * 3 large Eggs * 3⁄4 c Sugar * 5 T Water 1 tsp. vanilla Extract * 1 c All-purpose flour * 1 t baking powder * 1⁄4 t Salt Egg Custard for filling: 8 egg yolks 1 cup sugar 1 cup water For the custard: In a small saucepan, add the sugar and water and cook until dissolved and starts to bubble. Beat the egg yolks with a fork to break them up. Add a little bit of the sugary syrup to the egg yolks and stir vigorously so it doesn't cook. Now add the egg yolk mixture to the pan, continually stirring until it thickens...you don't want it to clump up or curdle. Once it thickens, remove from heat and allow to cool down. For the cake: Heat oven to 375. Grease and flour a 15-½ x 10-½ inch jelly roll pan, or spray with cooking spray. (I use wax paper sprayed with non stick cooking spray) Beat eggs until thick; add sugar, gradually, continuing to beat. Add water and vanilla; mix. Sift flour, baking powder and salt. Add all at once and beat until smooth. Pour into prepared pan. Bake about 12-15 minutes or until cake tests done. Do not overbake, it will be difficult to remove from pan and roll. Turn out on towel well-sprinkled with confectioners" sugar. Remove wax paper and quickly, trim edges with a sharp knife, and roll up in towel. Cool, unroll and spread evenly with jam or custard or whipped topping or whatever you wish. Sprinkle with powdered sugar and slice and serve. For the Napkins: Prepare as above, but after you trim the edges, cut the cake into equal sized squares. Add about a tablespoon or so of the egg custard and spread evenly. Fold the square in half like a napkin.

Nos anos 80, recordo-me do ritual das sextas-feiras. Ela chegava por volta das 11h com um grande cesto na cabeça, tocava à porta, o Lord disparava pelas escadas abaixo a ladrar como um doido e o pregão era sempre o mesmo: "Minha senhora, queijadas fresquinhas". O debate em casa era breve. "Compra lá", implorava eu à minha mãe. Por vezes, a mulher das queijadas apanhava o meu pai na rua e vendia-lhe as queijadas a ele em vez de vir cá a casa. Conseguia convencê-lo sem grandes dificuldades. Não sei o que foi feito desta mulher, mas ainda há poucos anos, o mesmo ritual de sexta-feira se cumpria. Sempre gostei muito mais destas queijadas do que das Queijadas de Tentúgal que me parecem excessivamente doces. As que eram vendidas à porta de casa dos meus pais eram massudas, coisa que me agradava. Um recheio espesso e uma crosta consistente. Como se tivessem saído das mãos de uma mulher com muita força. Na Queijadinha, em Pereira, que eu já tinha descoberto na internet há uns meses, as Queijadas de Pereira atingiram o grau de perfeição. Não são excessivamente rústicas como as queijadas que eram vendidas porta a porta por aquela mulher que chegava de comboio à Figueira da Foz, mas mantêm, ainda, uma certa simplicidade que nos remetem para comidas feitas em casa com amor. Mesmo que eu esteja a caminhar para o crudivorismo, estas Queijadas de Pereira vão sempre fazer parte das minhas memórias. Gustativas e não só :)

My childhood Christmas memories are mostly of people who were and still are part of my life - my family. As I grew up in Alentejo (in south interior Portugal), my Christmas food is, like most Alentejo's cuisine, very simple: cod fish and cabbage, turkey, "filhoses" and "sonhos" (fried Christmas sweets), King-cake and "broas" (honey cakes). Since I remember, 'broas' were my first Christmas food-related memory, first because they were my least favourite, later because I began to enjoy their peculiar taste and more recently when I started a 'new' recipe - based on a North Alentejo's recipe - that became a huge success amongst my family and friends, even those who deeply dislike 'broas'. Broas de Natal Portuguese Christmas Honey Cakes Makes about 30 120 grs yellow (or light brown) sugar 120 ml olive oil (low acidity) 4 Tbsp honey 250 ml water 150 grs walnuts, reduced to powder 1/2 tsp anise/fennel seeds powdered 1 tsp cinnamom 200 grs all purpose flour 100 grs cornstarch extra caster sugar In a saucepan (use one with a thick bottom), combine sugar, honey, olive oil, and water. When it starts boiling, add walnuts and spices. Mix well and allow to boil again. Mix in the sifted flour mixture, stirring well after each addition. Cook for 5 minutes until pastry folds together. Allow to cool. Make cakes into squares and with a knife mark diagonal crossed lines on top of each cake. Bake at 180ºC for 15-20 minutes or until golden. Sprinkle with caster sugar when cool.
