Chrupiąca focaccia jest idealna na śniadanie, przekąskę czy kolację. Możemy ją przekroić i zrobić z niej kanapki. Gwarantuję Wam, że cała blacha szybko znika :) Składniki: - 3,5 szklanki mąki pszennej (do ciasta drożdżowego), - ok. 1 i ok.1/3 szklanki wody, - 2 płaskie łyżeczki soli, - ok. 2 łyżki oliwy Gallo Classico. Zaczyn: - 1/2 szklanki ciepłej wody, - 15 g świeżych drożdży, - 1 łyżka mąki, - odrobina cukru. Dodatki: - sól morska gruboziarnista, - oliwki, - pomidorki koktajlowe, - świeże zioła tymianek/rozmaryn/kwiaty jadalne. Wykonanie: Robimy zaczyn na drożdze: 15g drożdzy rozpuszczamy w 1/2 szklanki ciepłej wody dodajemy mąkę i odrobinę cukru. Odstawiamy na ok. 15 min do wyraźnego ruszenia się drożdży. Do dużej miski, dodajemy mąkę, wodę, zaczyn z drożdżami oraz sól. Mieszamy składniki przy pomocy silikonowej szpatułki. Ciasto będzie gęste, lepiące się, ale przypominające kulę, podnosimy je z miski przy pomocy szpatułki lub ręką, wlewamy 2 łyżki oliwy do miski i ponownie wkładamy ciasto, tak żeby obtoczyć jew oliwie z każdej strony. Miskę szczelnie zawijamy folią spożywczą i wkładamy do lodówki na całą noc. Rano (min. po 8 godz.) formę do pieczenia ok. 35x25 cm smarujemy 1-2 łyżki oliwy (spód i boki) i przekładamy ciasto. Rozciągamy je palcami, robiąc w cieście wgniecenia palcami i zostawiamy do wyrastania w ciepłym miejscu pod przykryciem na ok. 1,5-2 godziny. Pod koniec wyrastania rozgrzewamy piekarnik do 250 stopni (góra-dół). Delikatnie robimy w nim kilka wgnieceń palcami, układamy warzywa/dodatki polewamy górę odrobiną oliwy, oprószamy solą. Wkładamy do gorącego piekarnika. Pieczemy ok. 15-20 minut do ładnego zarumienienia. Do focacci możemy wcisnąć w ciasto pomidorki koktajlowe, oliwki albo suszone pomidory na etapie wykładania ciasta na blachę albo tuż przed pieczeniem - wtedy będą bardziej na wierzchu. Wszelkie kwiaty i zioła łatwo się spalają, warto dać wtedy więcej oliwy.
