Hier das Rezept für 12 Muffins: Zutaten: 210g weiche Butter 110g Zucker 2 El Milch 20g Mandelblättchen 210g Mehl 2 Tl Backpulver 1/4 Tl Salz 1 Ei 1 Eigelb 180ml Buttermilch 1 Vanilleschote 400g zimmerwarmer Doppelrahmfrischkäse 5 El Puderzucker Zubereitung: Ein Muffin-Blech mit 20g Butter fetten und mit etwas Mehl ausstäuben. 50g Butter, 40g Zucker und die Milch unter Rühren aufkochen lassen. Mandelblättchen zugeben. Topf vom Herd nehmen. Den Backofen auf 190°C Ober- und Unterhitze (Umluft 170°C) vorheizen. 90g Butter zerlassen. Mehl, Backpulver und Salz mischen. Ei, Eigelb und 70g Zucker mind. 5 Minuten sehr cremig rühren. Zerlassene Butter nach und nach unter Rühren zugießen. Buttermilch unterrühren. Mehlmischung zugeben und nur kurz unterrühren, bis die Zutaten gerade so verbunden sind. Teig in die Mulden des Muffin-Blechs füllen. Mandelguss darauf verteilen. Im vorgeheizten Backofen auf der untersten Schiene ca. 20- 25 Minuten backen. In der Form abkühlen lassen. Die Vanilleschote längs einschneiden, das Mark herauskratzen, mit Frischkäse, restlicher Butter und Puderzucker gut verrühren. In einen Spritzbeutel füllen. Die Muffins aus dem Blech lösen, einmal waagerecht halbieren. Creme auf die Unterteile spritzen und Deckel daraufsetzen. Viel Spaß beim Nachmachen!!!
