Well after a great start getting back to eating to live more consistently last week, this week has been a bit more challenging. Namely because we ate out to eat a LOT more....almost every day. Ug. This goes back to my not preparing enough foods to have on hand for quick meals. Plus, my mom was in town and my kids were having Meet the Teacher events and it was just easier to go to a restaurant afterwards... While there are plenty of plant-based choices as most restaurants, they aren't always WHOLE food plant based. The biggest problem is oil.

Well, it's been a while since I've posted my food diary for all to see. Summer time has been tough since my two young boys are home and we've been on vacation off and on. This was a tough week, but I managed to keep my eating under control through all the emotions; I'm really glad I kept my food diary close by so I couldn't cheat & pretend it didn't happen. We went to the funeral of my brother's best friend, Pnut, and it was SO well attended. He touched so many lives in his short 40 years and it was evident in the packed church and friends & family who spoke so eloquently of his impact on them. Are you an emotional eater like I am? It's something I've struggled with for a while and it's practically ingrained in to our society. We eat when we are happy, we eat when we are sad, we eat when we are angry, we eat when we are bored, we eat when we celebrate, we eat when someone dies. We pretty much find any excuse, reason, or justification so we can to eat junk food. It's not called comfort food on accident. We are basically taught from an early age to emotionally eat. It's so nice to be back from vacation and able to get back into a good routine of eating healthy and not being tempted at every turn. I'm starting to feel more comfortable with this way of eating and not stressed about what to make each day. I like finding simple meal ideas like just a sweet potato, quinoa, and steamed veggie - easy and filling! Even my kids like that as a meal. Score! I did go try a vegan restaurant in Fort Worth called Spiral Diner and Bakery. My mom and I went there while she was visiting.
