This Wellesley Fudge Cake Recipe from an Ad in a 1941 Life Magazine makes a great Double Chocolate Cake! Yes, the name of this cake does come from Wellesley College. This recipe purports to go back 100 years ago when the founder of Wellesley College said "Pies, lies, and doughnuts should never have a place in Wellesley College." The college was not going to be known for house wifely skills, but rather a place of 'higher' learning for women. However, the women who attended Wellesley did make secret fudge. The thick fudge frosting is terrific. Since I'm posting a 1941 recipe, feel free to update with different chocolate or try my favorite recipe for Wellesley Fudge Cake from Cook's Country (scroll down). II. WELLESLEY FUDGE CAKE from CooksCountry.com CAKE 2 1/2 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon baking powder 1/2 teaspoon salt 3/4 cup hot water 1/2 cup Dutch-processed cocoa powder (see note) 16 tablespoons sweet butter, cut into 16 pieces and softened 2 cups granulated sugar 2 large eggs 1 cup buttermilk, room temperature 2 teaspoons vanilla extract FROSTING 8 tablespoons sweet butter, cut in half, and softened 1 1/2 cups packed light brown sugar 1/2 teaspoon salt 1 cup evaporated milk 8 ounces bittersweet chocolate, chopped 1 teaspoon vanilla extract 3 cups confectioners' sugar, sifted 1. MAKE BATTER Adjust oven rack to middle position and heat oven to 350 degrees. Grease and flour two 8-inch-square cake pans. Combine flour, baking soda, baking powder, and salt in bowl; set aside. In small bowl, whisk hot water with cocoa powder until smooth; set aside. With electric mixer on medium-high speed, beat butter and granulated sugar until light and fluffy, about 3 minutes. Add eggs, 1 at a time, and mix until incorporated. Add flour mixture in 3 additions, alternating with 2 additions of buttermilk, until combined. Reduce speed to low and slowly add cocoa mixture and vanilla until incorporated. 2. BAKE CAKES Scrape equal amounts of batter into prepared pans and bake until toothpick inserted in center comes out with a few crumbs attached, 25 to 30 minutes. Cool cakes in pans 15 minutes, then turn out onto wire rack. Cool completely, about 1 hour. 3. MAKE FROSTING Heat 4 tablespoons butter, brown sugar, salt, and ½ cup evaporated milk in large saucepan over medium heat until small bubbles appear around perimeter of pan, 4 to 8 minutes. Reduce heat to low and simmer, stirring occasionally, until mixture has thickened and turned deep golden brown, about 6 minutes. Transfer to large bowl. Slice remaining butter into 4 pieces and stir in with remaining evaporated milk until mixture is slightly cool. Add chocolate and vanilla and stir until smooth. Whisk in confectioners’ sugar until incorporated. Cool to room temperature, stirring occasionally, about 1 hour. 4. ASSEMBLE CAKE Place 1 cake square on serving platter. Spread 1 cup frosting over cake, then top with second cake square. Generously spread remaining frosting evenly over top and sides of cake. Refrigerate cake until frosting is set, about 1 hour. Serve.

El otro día os preguntaba en Instagram y Facebook si os apetecía que en EasyChic tratara otros temas aparte de las manualidades y la decoración. Os propuse tratar temas como manualidades infantiles, bebes y materinidad, recetas de cocina, trucos para diseño y creación de webs y blogs, estrategias de CM y SEO, moda... Y os vi muy animados con la idea, así que a partir de ahora EasyChic no tratará sólo asuntos de manualidades y decoración sino que lo convertiré en un espacio femenino con temas muy variados pensados para una mujer hogareña y familiar pero al mismo tiempo una mujer actual con inquietudes profesionales. Por supuesto que los chicos también podréis encontrar aquí material útil, porque cosas como las manualidades, la cocina, temas como el diseño web, SEO e incluso los bebés no son sólo temas de mujeres. Visto el nuevo planteamiento de EasyChic dentro de poco (en cuanto mi bebé me vaya dejando tiempo libre XD ) cambiaré su diseño y estructura para adaptarlo a estos nuevos contenidos. Aprovechando que ha coincidido con mi última semana de libertad alimenticia, es decir, que la semana que viene empiezo la dieta tras tener el visto bueno del médico para iniciar vida normal tras el embarazo y el parto, he decidido darme un homenaje de placeres y caprichos esta semana como para quedarme agusto por un tiempo ya que también durante el embarazo había tenido que cuidar la alimentación. Sé que todo lo que esta semana debore tendré que perderlo después pero me habré quedado tan agusto que tendré menos tentaciones. Entre estos caprichos he vuelto a realizar mi receta estrella, así la llamo puesto que cada vez que la hago triunfo. Suelo hacer muchos de estos pasteles para repartirlos con amigos, aunque siempre se quedan cortos por muchos que haga. Si habéis viajado a Portugal seguramente habréis visto estos pasteles en cafeterias, pastelerías y supermercados. Se llamaba pasteles de nata (pasteis de nata) o pasteles de Belem. Es uno de los pasteles tradicionales portugueses con mayor peso y es una de las recetas estrella de una de las pastelerías más famosas de Portugal situada en Lisboa, ciudad de donde son originarios, la pastelería de Belem. Se dice que su receta de más de doscientos años es secreta y que sólo tres personas la conocen... evidentemente yo no entro dentro de esa estadística que cuenta a estas tres personas pero he de deciros que he tomado estos pasteles desde pequeña en Portugal en cada uno de mis viajes al norte, medio y sur de Portugal, y esta receta que os traigo os va a proporcionar el sabor casi exacto. De hecho desde que los elaboro en casa no echo tanto de menos ir sólo para probar la repostería portuguesa porque puedo tenerla en casa, aunque si bien es cierto que la cocina y sobre todo la repostería portuguesa es tan variada de exquisiteses que es imposible no echarla de menos. Estos pasteles tienen una base de hojaldre y una crema elaborada con huevo, azucar y leche. Si hay algo que la reposteria portuguesa suele tener en común en sus pasteles es ese sabor de ovos moles, es decir esa mezcla del almibar con los huevos. Y sin más dilación os dejo con la receta. Ingredientes: 60 gramos de harina 7 yemas de huevo. 1/2 litro de leche. 500 gramos de azucar. 250 ml de agua. 1 cascara de limón. 1 rama de canela. Masa de hojaldre. Paso a paso: 1. De la cantidad de leche que utilizaremos tomaremos sólo un poco y la mezclaremos con la harina. 2. Aparte herviremos en una cazuela el resto de la leche con una cascara de limón y una rama de canela. 3. Cuando empiece a hervir la leche de la cazuela, añadiremos la mezcla de el resto de la leche con la harina (1) y removeremos poco a poco a fuego medio, hasta espesar un poco la mezcla. 4. Mientras tanto, en otra cazulea prepararemos el almibar. Calentamos un poco de agua... 5. ... y añadimos el azucar. Lo dejamos hervir durante tres minutos. 6. Una vez hervido lo retiramos del fuego y añadimos esta mezcla de agua y azucar a la mezcla de leche y harina. Lo añadiremos poco apoco e iremos removiendo. Es normal que os salga grumitos de harina no os preocupeis porque... 7. ... porque vamos a colarlo todo. 8. Separamos las 7 yemas de las claras y batimos. 9. Mezclamos las yemas con la mezcla anterior del almibar con la leche y la harina. Lo haremos cuando esta mezcla este un poco templada y no muy caliente. 10. Tomaremos la masa de hojaldre y haremos un rulo del que iremos cortando varias secciones. 11. Tras engrasar y enharinar los moldes típicos de magdalenas para que no se peguen nuestros pasteles, cogeremos cada una de estas secciones y las aplastaremos sobre los huecos del molde para crear la base de los pasteles. Procurar que os quede lo suficientemente fino porque sino después el pastel tendrá demasiado hojaldre y no quedará un suficiente equilibro de sabores entre el hojaldre y la crema. 12. Añadiremos la crema en los moldes. No la pongáis a rebosar, porque esta crema subirá mientras se hornea y podeís hacer que se os desborde del molde al hornear. Ya sólo queda hornear a 180 grados durante unos 20 min aproximadamente. El punto es que la crema no quede muy liquida y se cueza un poco pero que los pasteles queden también algo doraditos. Yo suelo subir un poco la temperatura al final para tostarlos un poco cuidando que no se quemen claro ;) Bueno pues espero que os haya gustado la receta, que os animéis a hacerla y que si la hacéis me contéis que tal estaban vuestros pastelitos.
