The Fraisier is a classic, instantly recognisable gateau that you will see in many patisseries. The classic mousseline filling has been replaced with a creme diplomat in this William Curley recipe. This is a light and refreshing treat, full of fresh strawberries and a soft, syrup soaked Genoise. This works best made in the summer with local small sweet strawberries, if you make it with large out of season strawberries it really wont taste as nice.
