Este bolo foi uma alegria, por momentos tive a sensação que devia de fazer um acordo com a rede eléctrica, depois os nomes que por cá lhe puseram, mas a resposta mais acertada para mim veio da minha mãe, nada mais que um bolo de casamento do século passado, embora ache que ela queria dizer de há dois séculos. Quando li o post da Susana tive a sensação que a coisa ia correr mal, muito mal, sou uma pessoa sem grande vontade para esperar, e aquelas idas todas ao forno, deixar arrefecer, decorar e voltar arrefecer foi um desânimo, mas como já aqui disse eu adoro estes desafios, aprender e crescer é sempre tão bom, portanto mãos à obra. Houveram duas tentativas, a primeira correu mal porque não esperei que as rodelas arrefecessem, e porque a conversa com a vizinha é sempre tão boa que a base e a tampa queimaram,desistir? Nunca. No domingo meti na cabeça que tinha que ser e foi, mas atenção a tampa não arrefeceu totalmente e daí ter custado a cortar, mas e agora? É uma receita difícil? Nada, nada, achei a minha receita do bolo sao marcos bem mais trabalhosa, e se fiquei com receio do merengue suiço quando comecei a fazer pensei é só isto? Acreditem em nada esta sugestão deve assustar, para mim há alguns pontos importantes para bons resultados, primeiro sejam pacientes deixem mesmo arrefecer todas as rodelas e tampas, a temperatura do forno deve ser seguida à risca assim como é importante pré-aquecer o mesmo, da segunda vez que fiz coloquei mais cedo e notei melhores resultados, a Lia diz que não esperem conseguir cortar fatias perfeitas, palavras sábias, esqueçam isso, eu por momentos até pensei fazer um trifle! A frescura dos morangos combina tão bem com o crocante do merengue, é um casamento perfeito, em relação às flores podem sempre usar pasta de açúcar ou até cristalizar uns amores-perfeitos lilás até que esta era a minha ideia inicial mas tinha que esperar ainda mais e daí ter perdido a vontade. E depois de tanta espera aqui fica a minha participação Susana. Spanische Windtorte receita retirada do blog basta cheio Merengue Francês 7 claras à temperatura ambiente 1/2 colher de chá de creme tártaro (usei fermento em pó) 380 gramas de açúcar Merengue Suiço 2 claras à temperatura ambiente 125 gramas de açúcar Recheio 200 ml de natas para bater 25 gramas de açúcar em pó 25 gramas de açúcar 200 gramas de morangos maduros cortados em pedaços pequenos 2 colheres de sopa de vinho do Porto Decoração pétalas de flores em lilás Pré-aquecer o forno a 120ºC. Forrar três tabuleiros com papel vegetal e desenhar 5 círculos com 18 cm e untar o papel com manteiga, reservar. Numa tigela limpa bater as claras (7) com fermento até estarem firmes e juntar o açúcar colher a colher, batendo bem entre cada adição, deve deixar de ouvir ao bater o açúcar. Colocar o merengue num saco de pasteleiro com a boquilha larga e lisa e preencher dois círculos começando pelo centro. Desenhar nos três círculos o contorno dos mesmos devendo ter cerca de 3 cm. Levar ao forno cerca de 45 minutos até o merengue estar firme. Retirar do forno e deixar arrefecer completamente. Forrar novamente um tabuleiro de forno com papel untado e colocar um dos discos preenchidos, por cima deste e com ajuda do saco de pasteleiro verter montinhos de merengue e por cima colocar um dos discos, voltar a dispor montinhos de merengue no disco e colar o segundo disco, terminar por colar o terceiro disco como foi feito nos restantes. Depois de estar o bolo montado com a base e os discos barrar por fora com ajuda de uma espátula deve ficar uniforme. Levar ao forno ( não desligue depois de retirar os discos) cerca de 35 minutos. Retirar e deixar arrefecer. Preparar o merengue suiço. Numa tigela limpa e que possa ir a banho-maria colocar as claras com o açúcar e levar ao lume em banho-maria batendo com uma vara de arames até o açúcar estar dissolvido, retirar e com a batedeira bater muito bem o merengue até estar firme e frio. Deitar o merengue num saco de pasteleiro com a boquilha frisada e decorar a caixa de merengue e a tampa. Levar ao forno pré-aquecido durante 20 minutos a 120ºC. Retirar e deixar arrefecer completamente. Decorar o bolo com as flores, para as mesmas aderirem colocar merengue suíço em cada pétala como se fosse cola. Numa tigela colocar os morangos e peneirar o açúcar em pó por cima e salpicar com o vinho do Porto, deixar repousar 35 minutos. Bater as natas com o açúcar até estarem firmes, coar os morangos de forma a irem com muito pouco liquido e envolver nas natas. Preencher a caixa com o recheio de morangos e tapar com a tampa decorada. Servir ou se não consumir todo guardar no frio. Bom Apetite...
