These crepes are almost as like French crepes.However most of the Central European pancakes are thin pancakes similar to the French crêpe. The main difference between the French and this Hungarian version of this dish is that the mixture for this crepes can be used straight away unlike that of the French crepes which is suggested to be left at rest for several hours. Palacsinta are made by creating a runny dough from eggs, flour, milk, and salt and frying it in a pan with butter or oil. Unlike thicker types of pancakes, palascinta are usually served with different types of fillings and eaten for lunch or dinner.One among the well known crepes of this Hungarian cuisine is the Gundel pancake (Gundel palacsinta), made with ground walnuts, raisin, candied orange peel, cinnamon, and rum filling, served flambéed in dark chocolate sauce made with egg yolks, heavy cream, and cocoa. But the Hungarian pancakes i picked for this blogging marathon is the simplest one, you can fill this palacsinta simply with any spread like apricot or strawberry jam, you can also go for sugar, grounded walnuts or poppy seeds. Some people may also fill their pancakes with sugared cheese, sweetened cocoa or simply with cinnamon powder. These thin crepes are dangerously addictive and my kids enjoyed this cigars shaped like crepes happily for their evening snacks. These crepes can be prepared very easily with simple ingredients,we loved it very much. However i prepared this crepes with eggs, an eggless version can also be prepared if you replace the eggs simply with buttermilk. Recipe Source: Budapestology 2cups All purpose flour 3cups Milk 3nos Eggs 2tsp Sugar 2tbsp Oil Take the eggs in a large bowl, beat with a hand mixer. Add the flour, sugar, milk and oil, beat everything well, the batter should be smooth and runny. Heat a crepe pan or a frying pan, heat some butter on medium heat, drop enough batter, turn the pan until the batter cover the bottom of the pan. This crepe should be thin, when its turns brown, flip and cook on the other side. Remove the crepe from the pan, continue the same process with the remaining batter. Put jam, marmalade or anything over the crepe, spread it and roll it carefully. Sprinkle some sugar in the top. Serve immediately. This is one of the Hungarian specialities, a very common cake here. I don't know, whether You know this cake or not. Do You? :) I learnt the recipe during my cooking lessons in the University. I made it many times since then, too. :) Ingredients: 4 eggs 200 g granulated sugar 125 g margarine pinch of salt 750 g curd cheese 7 dl milk 500 g pasta (angel hair ) 2 tbsp vanilla sugar 3 tbsp sour cream 2 tsp lemon juice (cinnamon - optional) a package strudel pastry icing sugar Preparation: 1. Put the milk on the stove to heat. 2. Break the eggs, separate the egg whites. 3. Add a pinch of salt to the egg whites and mix it to get a foam. 4. Add the margarine and the sugar to the yolks, mix them, too. Then mix it with the vanilla sugar, and the sour cream, too. 5. Cook the pasta in the milk, you should stir it, while you cook it. 6. Mix the milky pasta to the pastry, then add the curd cheese to it, and a little lemon juice, and cinnamon if you like. Blend them. 7. Pour the foam to the pastry, and mix them carefully. 8. Oil 2 loaf tins with oil or margarine. 9. Put carefully strudel pastries into the tins. 10. Fill them with the curd cheesy-pasta pastry. 11. Cover them with the strudel pastries. 12. Bake them in the oven for an hour, 150' C. 13. When they are ready, cool them for 10 minutes, then you can serve them. HUNGARIAN CHICKEN or HEN SOUP Csírke / Tyúk Leves The queen of soups in any Hungarian gathering is Chicken Soup. The traditional noodle is hand-made Csiga Tészta- Screw Shaped is the noodle of choice. No wedding would be complete without it. The golden gloss of this soup is the pride of an excellent cook. Any season is the time for Chicken/Hen Soup. Aromas that you recognize in later years, that actually tug at your heart. There is no soup as good as the soup mom made. My mom's Hungarian heritage is evident in the method and ingredients of this classic recipe. 1 3-4 lb Stewing Hen (Mature Chicken) 4 quarts water 1 tbsp salt 8 peppercorns 3 carrots 3 parsley roots 3 ribs celery w/ leaves, 1 pc kohlrabi (in season) 1 chicken OXO cube 1 onion, unpeeled 1 thread Saffron Cut up stewing hen and place cleaned pieces into large soup pot with water, salt, and peppercorns. Bring to a slow boil. Skim foam from top with small cup-size sieve as soon as it appears. Continue 2 or 3 more times. Then, slowly simmer chicken soup until meat is fork tender, about 2 hours. Add cut up vegetables and seasonings. Continue simmering over lower heat until vegetables are tender, about ½ hour. Remove large pieces of meat and vegetables into serving dish. Strain soup through a fine sieve slowly into soup tureen so that soup stays clear and golden. Serve meat and vegetables and soup along with Hungarian noodles like fine Laska or Csiga or Kocka. (The photograph by Evangbeline Mackell, Design in Bloom, shows the square noodles or Kocka Tészta) Just like every other authentic Hungarian soup, chicken soup is a slow cooking soup that takes a bit of time. The secret to making glassy, glissening and clear soup is to simmer the soup, never boil. Also, use unpeeled yellow onions as the peel imparts a very desirable golden yellow colour to the soup. The results are beautiful. Chef’s Hint: Saffron is a spice derived from the flower of the saffron crocus and is a bright orange in colour. Saffron is the three stigmas of the saffron crocus. They are delicate and thread- like, each measuring 2.5-4 cm. Its colour is a bright orange-red, and is used in cooking as a seasoning and colouring agent. The redder the saffron, the higher the quality. It is a secret weapon used by skilled chefs – one thread will brighten your hen soup to a glorious gold.
This recipe is an adoptee from the RecipeZaar account. It's a nice, simple potato casserole; very satisfying. Next time I make it, I will toss the potatoes with most of the butter, rather than leaving the butter in the bottom of the casserole. A felhalmozódott kerti munkák miatt csak késve, ma tudom megmutatni a tegnapi ebédünket. Kicsit pepecselősnek tűnhet, hogy többször kiemeljük a húst az edényből, meg visszahelyezzük, de higgyétek el, hogy megéri az időt rászánni. Nagyon finom, kellemesen pikáns, egyedi ízt kölcsönöz a mustár mind a húsnak, mind a mártásnak. A tejszíntől krémes mártás remek kiegészítője a husinak. A családnak kifőtt tésztát készítettem, de Párom kívánságára Ő párolt rizsát kapott hozzá. Hozzávalók 4 főre: *8 vékony karaj szelet *só *őrölt bors *8 púpos tk mustár *1 nagy fej vöröshagyma *4-5 ek olaj *2 dl főzőtejszín (20%-os) A karaj szeleteket meghintjük sóval, borssal és bedörzsöljük mindkét oldalukat mustárral (nekem kb. 1 púpos teáskanálnyi jutott minden szeletre). A megtisztított vöröshagymát kockára vágjuk. Egy magasabb falú serpenyőben 4-5 evőkanál olajat forrósítunk. Ha már jó forró a husik mindkét oldalát hirtelen megsütjük rajta, épp hogy kapjon egy kis barnás színt. Kiemeljük az olajból, majd az apróra vágott vöröshagymát megpirítjuk rajta. Visszahelyezzük a husikat, majd felöntjük kb. 3 dl vízzel. Lefedve addig főzzük, míg a karaj szeletek megpuhulnak. (Ha még nem elég puha, pótoljuk kevés vízzel. Ha a hús puha és a víz is sűrű szafttá főtt, a husikat kiemeljük belőle, melegen tartjuk. A barna mártásba öntjük a sűrű tejszínt, mérsékelt lángon hagyjuk átforrósodni. Megkóstoljuk, és ha még szükséges, ízesítjük kevéske sóval, illetve borssal. Akit zavarnak a mártásban a hagymadarabok, nyugodtan átpasszírozhatja vagy merülő mixerrel pépesítheti. Melegen, kifőtt tésztával kínáljuk.

A jászberényi születésű Déryné Széppataki Róza Kolozsváron sokat tett az opera-előadások elindításáért és népszerűsítéséért. Talán ezért kapta a kolozsvári jelzőt az amúgy először Nagyváradon készült ételköltemény, amely Hajdú Károly alispán nevéhez fűződik. Az alispán Déryné látogatásának tiszteletére készítette ugyanis a kolozsvári rakott káposztát az erdélyi népi főzésmódok gazdag tárházának alkalmazásával. Déryné kis étkű volt, de feljegyezték, hogy a korabeli illemszabályok ellenére is háromszor kért a remek fogásból. A receptet hazavitte Pestre amely azóta különböző változatokat megélve ékesíti a magyar konyha gazdag kínálatát. Forrás: innen Amint hidegebbre fordul az idő én már bizony a tartalmasabb ételeket részesítem előnyben. Az erdélyi vagy kolozsvári rakott káposzta nagy családi kedvenc. Igaz, kicsit időigényes az elkészítése, mint általában a rakott ételeké, de megéri fáradozni vele, ha nem fogy el, másnap újramelegítve talán még finomabb. Ízekben igazán gazdag fogás, remek egytálétel. Nagy előnye, hogy előre is összerakható, másnap csak be kell tolni a sütőbe és egy órácska leforgása alatt már tálalva is van az ínycsiklandozó ebéd vagy vacsora. Úgy tudom Erdélyben még főtt tojást is tesznek a rétegek közé és hirtelen sült karajjal kínálják, úgy még látványosabb és kiadósabb. Ezek után nézzük, hogyan készítem én. Elkészítési idő: 100 perc Kolozsvári rakott káposzta Hozzávalók: 1 kg savanyú káposzta 50 dkg darált hús (lapocka) 20 dkg füstölt kolbász 10 dkg füstölt szalonna 2 vöröshagyma 2-3 g fokhagyma 20 dkg rizs 4 dl tejföl só őrölt bors pirospaprika majoránna Elkészítése: A káposztát, ha túl savanyú, átmossuk, kinyomkodjuk. A rizst lobogó sós vízben félpuhára főzzük, leszűrjük. A kolbászt felkarikázzuk, kevés zsiradékon átsütjük. A szalonnát zsírjára olvasztjuk, a szalonnapörcöket kiszedjük, a visszamaradt zsiradék felén megpároljuk az egyik apróra vágott vöröshagymát, meghintjük pirospaprikával, beleforgatjuk a savanyú káposztát. Őrölt borssal és majoránnával fűszerezzük. Kevés vizet aláöntve, fedő alatt puhára pároljuk, időnként pótoljuk alatta a vizet. A megmaradt zsiradékon megfonnyasztjuk a másik apróra vágott vöröshagymát és a zúzott fokhagymát, meghintjük pirospaprikával, beleforgatjuk a darált húst, sózzuk, borsozzuk, kevés vizet aláöntve fedő alatt puhára pároljuk. Egy tepsit vagy hőálló edényt fagyos zsírral kikenünk, elkezdjük rétegezni a hozzávalókat. Az edény aljára tesszük a káposzta egyharmad részét, rásimítjuk a rizs, majd a hús felét, rákerülnek a kolbászkarikák és a kisülő zsír fele. Újabb káposztaréteg következik, amit meglocsolunk tejföllel, újra rizs és a hús másik fele, a maradék kolbász és zsírja, amit befedünk az utolsó réteg káposztával. A tetejét bőven meglocsoljuk a maradék tejföllel, megszórjuk őrölt borssal és pirospaprikával. Sütőben 180°C-on kb 3/4-1 óra alatt készre sütjük.
