A staple during Nowruz (Persian New Year) festivities, these delicate cookies are flavored with rosewater and cardamom and have a texture similar to shortbread. Made with rice flour, nan berenji are also gluten-free. Traditionally, one forms balls from the dough, then presses them with a Persian cookie stamp that leaves a curved ridged design on top of the cookie, but you can achieve a similar effect using a spoon. Be sure to let the dough fully rest in the fridge so the flour has time to hydrate and the flavors can meld.

We went behind the scenes at Hot Bread Kitchen in Harlem and learned how to bake some mind-blowing bread. And you can make it at home, too. Not only does Hot Bread Kitchen (HBK for short) make delicious breads, but they're breads with a cause: HBK, founded by Jessamyn Waldman Rodriguez, trains immigrant and low-income women in baking, and empowers them to find employment in New York City’s top bakeries. Watch for a special (easy!) technique and try your hand at making one of their most popular

Nothing beats fresh-out-of-the-oven barbari. This classic Persian flatbread is common all over Iran and a staple on the breakfast table, usually served with cheese, herbs, walnuts or jam and honey. It’s a bit crispy on the outside and so fluffy on the inside. The bread's special flavor comes from the baking soda and flour glaze that's brushed on before baking. In Persian bakeries, the bread is traditionally formed into a long oval loaf and cooked in a wood-fired oven. The home baker can make a smaller oval to fit in a standard oven.

This chewy, flavorful flatbread, brushed with an interesting oil-and-flour glaze and topped with two kinds of seeds, is the perfect accompaniment to a Middle Eastern meal. Higher-protein unbleached bread flour, plus lots of water in the dough, give the bread wonderfully light texture.

Caramel slice is an Australian classic. And why wouldn’t it be? There’s something about the combination of sweet textures, which each have their own subtly different undertones, that makes the dessert disappear before you know it. Whether you were introduced to it at a primary school bake sale, or in your Nan’s kitchen, one thing’s for sure - it probably didn’t have this mouth-watering twist! Adding espresso to the mix makes for a more elegant, adult flavour which still allows that taste of caramelly nostalgia to shine through. The great thing about this recipe is that the texture of the caramel can be easily customised to your liking! If you prefer a firmer caramel, store refrigerated in an airtight container for up to a week. If a softer, gooier texture is more your thing, leave out at room temperature.

There’s a new cookie in town… Well, really it’s an old cookie. This is one of our family faves that Nan used to make for us way back when, updated/tweaked into a healthy keto. Now we get that same taste just like Nan's, but without the blood glucose spike from the old recipe. These squares is a recipe that gets tucked away in our freezer every winter in many different variations, We make them with allll kinds of berries; bakeapples, blueberries, partridgeberries, blackberries....sometimes even a combination of them all! What kinds of berries will you try? Do these look good to you?
