Il dolce che più amo da acquistare in pasticceria è proprio lui, sua maestà il Babà...purtroppo troppe volte mi capita di trovarlo esageratamente zuccherato e quasi disgustoso, perchè sì, amo i dolci, sono golosa, ma i dolci troppo zuccherati non mi piacciono per niente. Quindi, inevitabilmente, in pasticceria li guardo e desisto perchè so che deluderanno come al solito le mie aspettative... Ovviamente dipende dalle pasticcerie, se vado da Gennaro Volpe a Napoli potrei anche non fermarmi...sono troppo buoni! Venendo quindi da diversi traumi da babà troppo bagnati, troppo zuccherati, insomma deludenti, avevo quasi timore a prepararli...la ricetta giusta c'era ma mi mancava sempre quel pizzico di convinzione per cominciare un dolce che richiede passione... Quante volte avrò visto in tv maestri pasticceri napoletani fare quel classico movimento di mano e polso per realizzare quelle palline strozzate, quante volte ho pensato di sporcare mezza cucina lanciando l'impasto ovunque...e invece no. Con mia grande sorpresa ci sono riuscita, ma è tutto merito dell'impasto ben incordato ed elastico, tutto merito del mio mito, Luca Montersino! Trovate qui, sul magazine online lorenzovinci.it, un articolo sul babà e la ''mia'' ricetta selezionata tra le migliori del web! BABA' AL RUM da "Tiramisù e chantilly" di Luca Montersino Ingredienti: 400 g farina manitoba 400 g uova 40 g zucchero semolato 20 g lievito di birra 160 g burro morbido 8 g sale Nella ciotola dell'impastatrice mettere la farina, il lievito sbriciolato e lo zucchero. Azionare la macchina con la foglia e aggiungere il primo uovo, far lavorare qualche minuto anche se l'impasto sembra molto asciutto. Procedere ancora così aggiungendo uno alla volta le uova, poi al terzo o quarto uovo inserito, far lavorare l'impasto almeno per 5 minuti senza aggiungere altro liquido. Si dovrà avere un impasto abbastanza sodo che, col passare dei minuti, diventerà sempre più elastico (si vedrà il glutine che comincia a formarsi). A questo punto aggiungere ancora un uovo e cominciare ad aggiungere poco alla volta il burro morbido, alternando con le uova rimanenti, facendo attenzione a far passare almeno un paio di minuti tra l'inserimento di un uovo e l'altro. Se l'impastatrice dovesse avere difficoltà a prendere tutto l'impasto nella ciotola, spegnere la macchina, ungere bene le mani e un tarocco con del burro morbido, staccare dalle pareti l'impasto e azionare nuovamente la macchina. Inserire il sale, far lavorare ancora per far sì che il sale si sciolga bene nell'impasto. Imburrare bene gli stampini da babà in alluminio, se li avete in silicone non sarà necessario imburrarli, però consiglio di utilizzare quelli in alluminio perchè il colore viene dorato e uniforme, col silicone rimane sembra più chiaro con l'aspetto del "crudo". Una volta terminato l'impasto, che dovrà risultare ben incordato, ungersi bene le mani e prendere una piccola quantità di impasto. Fare il tipico movimento per realizzare la pallina (purtroppo non riesco a spiegarlo, bisogna vederlo...), strozzarla tra pollice ed indice e farla cadere nello stampino. Far lievitare in luogo caldo, circa 30°C, per 2 ore o fino a fuoriuscita dell'impasto dallo stampo, come nella foto seguente, poi cuocere in forno preriscaldato a 170°C per 15-20 minuti. Una volta cotti, sformarli appena usciti dal forno. Per la bagna: 2 kg acqua 750 g zucchero semolato buccia di una arancia buccia di un limone 2 stecche di cannella 2 chiodi di garofano 275 g rum 70° Versare tutti gli ingredienti, tranne il rum, in una casseruola e portare alla temperatura di 70°C. Spegnere il fuoco, aggiungere il rum , filtrare e lasciar raffreddare coprendo con pellicola. Se preferite il limoncello, sostituite in pari quantità il limoncello al rum e invece dei chiodi di garofano utilizzate due pizzichi di cardamomo. Per la finitura: il babà dovrà essere ben raffreddato, meglio se cotto uno o due giorni prima dell'inzuppo. Scaldare la bagna in una casseruola, portandola a 70°C, immergere i babà, strizzarli, come se fossero una spugna, immergerli di nuovo, strizzarli nuovamente e disporli su una griglia per lasciar scolare la bagna in eccesso. Ricoprire con gelatina neutra a freddo o gelatina di albicocche per dare quell'aspetto lucido così elegante. Volendo si possono tagliate a metà e servire con crema chantilly e fragole o fragoline di bosco. Lo so...ho messo tante foto, ma è la prima volta che faccio i babà e mi piacciono troppo...non sapevo quale foto scegliere! :)
