The fall and winter fruit known as quince has a flavor somewhere between a pear and an apple, but it's quite tart when raw—sometimes even downright astringent—and has hard, dry flesh. However, when cooked into desserts, jams, pastes, or compotes, quinces soften and become something much more unique and appealing than their uncooked counterparts. We wanted to showcase the flavor of quinces in a sophisticated pie with strong seasonal appeal. Instead of just slicing the quinces and tossing the hard fruit in the pie, we poached them first; this step not only softened the fruit to the perfect texture, but the poaching liquid infused it with flavor. We chose red wine as our medium for its deep, round flavor and dramatic hue. Taking a cue from a wintertime favorite, mulled wine, we added spices and some floral citrus zest. We mashed half of the poached quinces and sliced the other half; quinces are a pectin powerhouse so this technique was enough to create pie that set up without an additional thickener. We combined the quinces with a bit of the cooking liquid and some dried cherries, which underscored the fruity tartness of the wine. It's important to be fastidious when coring quinces, as the core remains tough even after cooking.

It was actually his description at the end that did it. He described the recipe as "You should have a meal where the meat is tender with a lovely thick red sauce with your potatoes or quince fruit." Doesn't that sound absolutely, insanely luscious? I read the recipe - it seemed simple, actually truth be told perhaps too simple so I only made half a batch of this lest it not work out. I shouldn't have worried. Yes it is easy but it is also wonderfully comforting and full of flavour. The sauce cooks down so that it is beautifully thick but not dry, the beef is so tender and the quinces take only a short time until they too blend into the rubied stew with the soft chunks of melting beef.

It’s chutney time- when the smell of vinegar fills the house and the kitchen windows are fugged up with the condensation from a bubbling preserving pan. This month’s batch uses that wonderful autumn fruit, the quince. They are not particularly popular in the UK which is a shame as they have a unique flavour and texture. If you drop the prepared quince into the preserving pan with the vinegar they won’t discolour, but don’t worry if they do as the fruit will turn brown during cooking. My top tip of the day is never to cover chutney jars with cellophane lids as the vinegar evaporates through them- which will dry out the chutney. Leave the chutney a month for the flavours to mature and eat it with a really tangy cheddar or strong blue-veined cheese such as Per Las.

So eine Kleinstadt in unmittelbarer Nähe hat ja durchaus ihr Gutes. Alles ist übersichtlich, die Wege sind kurz, man kennt sich. Ein Nachteil ist allerdings, dass man, wenn man sich vorgenommen hat, etwas Bestimmtes zu kaufen, dies nicht so ohne weiteres bekommt. Und ich wollte Quitten! Ich liebe diese Früchte schon seit meiner Kindheit. Wir hatten keinen eigenen Quittenbaum und waren somit auf die milden Gaben der Verwandtschaft angewiesen. Meine Mutter kochte die raren Früchte dann in großen Weckgläsern ein.Wie freute ich mich, wenn sie dann Sonntags zum Nachtisch mal ein Glas für uns öffnete. Seit Jahren nun liege ich meinem Mann in den Ohren, dass ich endlich mal einen eigenen Quittenbaum haben möchte. Und was soll ich euch sagen: Seit diesem Jahr steht er bei uns im Garten! Last December, I picked up a small quince tree from my nursery in Berkley and put it in a large pot in my backyard. The one warning, I did receive from the seller, it might not fruit in year one. But a few months later in spring, big bright white flowers popped up and eventually turned into large, hard pear shaped fruit. And about a week ago they started to fall off the tree and turn fragrant, a sign that they were ready. But unlike other fruit that turn soft and/or sweet, a quince doesn’t do that when ripe. When raw, they’re too firm, tart, and astringent to enjoy, so they must be cooked. Quince are also rich in pectin (it’s in the group of fruit such as apples that contain a high amount of pectin) so it makes an excellent choice for jams, jellies, and paste.
